Ushigoro (Ginza)
A yakiniku restaurant on the seventh floor of a building, just a short walk from Ginza-itchome Station. The interior is calm and modern, hardly what you'd expect from a yakiniku place, and smoke is never a bother.
What I can't forget is the signature beef yukhoe. It melted the moment it touched my tongue, leaving a gentle sweetness behind. The grilled meat was just as tender, melting in the mouth piece after piece. The staff grill everything to exactly the right point, so all you have to do is enjoy it.
They use only A5-grade Japanese Black heifers, the top rank of Japanese wagyu. The yukhoe is made from the marbled part of the sagari, a cut that each animal yields only a little of.
