Menya Appare (The Starling)

A place for really good Japanese tonkotsu ramen.

What stays with me is how creamy the broth is. The richness of the pork bones is fully drawn in, and it feels very smooth on the tongue. The chashu is meltingly tender and settles nicely into the soup.

The broth is simmered from pork bones for 48 hours. The shop is run by Ayako Ishizuka from Japan, who checks the flavour every day and makes the ramen herself.

Whenever I miss Japanese tonkotsu ramen, I'll come back.
