A sukiyaki restaurant run by a long-established butcher, a short walk from Ningyocho Station. The butcher's shop is on the ground floor, with private tatami rooms upstairs.

What surprised me most was how tender the beef was. Simmered briefly in the warishita sauce, it simply melted in my mouth. A server looks after the pot from start to finish, so all you do is wait for the meat at its very best. It's an easy place to take your time and enjoy the conversation.

Hiyama began as a butcher in Hiroshima in 1912, moved to Ningyocho in 1928, and has been serving sukiyaki since 1935.

When I want truly good sukiyaki in Tokyo, this is where I come.
