The broth in the bowl is packed with the savoury depth of seafood. Even so, it tastes clean and light. The popular shellfish-stock shoyu ramen is a bowl where a hint of yuzu tartness and onion sweetness come together over a stock with scallops added. The noodles are made from 100% wheat and brought in from Japan. The brothless dan dan noodles are another signature, known for a chilli oil made with 20 spices and 32 ingredients.
The original shop is in Kobe; in Japan it has been selected for the MICHELIN Guide's Bib Gourmand, and it is also among Tabelog's Top 100. The interior is simple and calm, with little decoration. Besides the shoyu and shio ramen, there are side dishes such as karaage.
